GADO-GADO Salad with Peanut Sauce

Gado gado salad with peanut sauce is a typical Indonesian salad that consists of steamed vegetables and is topped with wonderful peanut sauce. Adding crispy tempeh or simple fried tofu will make it perfect!

  • 150 gr Cabbage (roughly cut)
  • 150 gr Carrots (divide the length in 2 or three then cut in the long chunky stick)
  • 150 gr long beans (cut in medium length stick)
  • 80 gr Bean sprouts
  • 500 gr Spinach
  • 4 tbsp natural peanut sauce
  • 60 ml Coconut milk (+ 60 ml of water if it’s too thick) or you can use 100 ml soy milk.
  • 1 tbsp dark sweet thick soy sauce
  • Salt and pepper
  • 2 l Water
  • Bring to boil the water in a pot. Cook the vegetables one by one for 3 minutes each more or less).
  • Drain them once they are cooked and put them in a big bowl / big plate separately.
  • Meanwhile, prepare the peanut sauce. Bring to boil the plant-based milk in a saucepan at low medium heat, then bring in the peanut sauce and the soy sauce. Whisk to mix well and you have a thick sauce.
  • Add salt and pepper to taste into the peanut sauce, turn off the heat.
  • On a plate, arrange the cooked vegetables as you like, top it with fried tofu or fried tempeh (cut in big diced) then pour in the sauce on top. Voila, it’s ready to be served with any of your favorite chips.
