Rebel Vegetable FRITTERS

Vegetable fritters are the perfect bite for any occasion, healthy, crispy, and tasty dish that will make you crave for more. Usually, I make them fried, but I decided to bake them and avoid using oil for a healthier result.

  • 60 gr Soy Sprouts
  • 60 gr Shredded Carrots
  • 1 scallion (thin sliced)
  • 1 garlic
  • 1 small shallot
  • ½ tsp coriander powder
  • 60 gr red lentils flour
  • 20 gr rice flour
  • 100 ml water
  • Salt
  • Pepper
  • Preheat oven 180°
  • Blend the garlic, shallot, and coriander powder by adding a bit of oil or water in a small blender.
  • Mix the red lentils and rice flour, add the garlic, shallot, and coriander blend then stir in water, mix well.
  • Stir in the vegetables in the flour mix and add salt and pepper as needed.
  • Put on baking sheet paper on the pan and brush lightly with oil to avoid them become sticky then scoop one tablespoon at a time the vegetable batter on the baking sheet.
  • Bake them for 25 – 30 mins and flip them half time.
  • Serve them hot!
