Vegan QUINOA alla norma

Vegan quinoa alla norma is inspired by the pasta alla norma, I make the plant-based version of this healthy and tasty quinoa salad. It’s healthy because the eggplant is baked instead of fried. The fresh aroma of ginger will make you crave more.

  • 2 pcs purple eggplant (cut in small diced)
  • 300 gr quinoa (wash and cooked by boiling or by using rice cooker)
  • 4 cloves garlic (minced)
  • 2 cm fresh ginger (minced)
  • 40 gr fresh parsley (thinly chopped)
  • ½ tsp chili flakes (if you like spicy)
  • Salt and pepper
  • Coarse salt
  • Extra virgin olive oil
  • Preheat the oven at 180°C
  • On a baking tray with parchment paper, put in the diced cut eggplant, add the coarse salt and oil, combine, and spread evenly. Bake them for 25 minutes.
  • Meanwhile, heat the oil in a pan, add the minced garlic and ginger, sauté for a few minutes until fragrant.
  • Once the eggplant is ready, take them out from the oven and mix them well with the garlic and ginger. Cook them for a few minutes.
  • Add the cooked quinoa, combine and mix well. Add salt, pepper, and chili flakes to taste.
  • As a final touch, add in the fresh parsley and mix well with the rest of the ingredients.
  • Turn off the heat and serve hot.
