Vegan LOBSTER Potatoes

Vegan “lobster” potato will blow your mind and will blow your guests’ minds. Not just do they taste so good, but they also look wonderful. Yeah, I know, it takes a bit of effort to make it, but it’s worth it, I promise! The key for this recipe is CHOPSTICK, and that’s ‘it. This recipe is best served with delicious vegan baccalà, definitely a must-try combo!

  • 1kg potatoes of your choice (wash them without peeling the skin)
  • 1 tsp paprika powder
  • 2 cloves garlic (minced)
  • 1 tsp dried or fresh rosemary
  • Salt and pepper
  • Extra virgin olive oil
  • Preheat the oven at 200° and mix all the spices ingredients (apart from the potatoes) in a bowl, whisk, and mix them well, set aside.
  • Put a pair of chopsticks on a cutting board and put a potato on top of it.
  • Start thin slice potato and use the chopstick as a base to avoid you chop/break all the potatoes.
  • On parchment paper, put all the potatoes on a baking tray and start brushing them with the marination spice one by one.
  • Bake them for at least 50 minutes or until they turn golden brown and crispy.
  • Serve them hot with delicious vegan baccalà or any of your favorite dishes.
