Vegan Double Chocolate Mini Banana PANCAKE

Vegan double chocolate mini banana pancake is our Sunday breakfast favorite, it’s our way to start a relaxing day. The warm and sweet pancakes combined with dark chocolate spread and fresh berries. A perfect way to start your day with sweetness and kindness!

  • 1 large mature banana (mashed)
  • 240 ml soy milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (melted room temperature)
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoon water)
  • 1 tablespoon whole cane sugar
  • 50 gr cacao powder (without sugar)
  • 180 gr spelled / oat flour
  • 1 tablespoon baking powder
  • ½ teaspoon cinnamon powder
  • 30 gr dark chocolate chips
  • A pinch of salt
  • Fresh berries (strawberries, blueberries, blackberries, or raspberries)
  • Agave syrup
  • Dark chocolate spread
  • In a big bowl, mix all the dry ingredients (flour, baking powder, cinnamon, salt, and cacao powder), stir well.
  • In another bowl, mix well the wet ingredients (the mashed banana, soy milk, oil, vanilla extract, flax egg, and cane sugar).
  • Mix the wet ingredients into the dry ingredients, stir and mix well, then add the chocolate chips.
  • Leave it to rest for 10 minutes, then scoop it with a tablespoon into a medium-heated frying pan. Cook it for 3 minutes on each side or until brown and cooked.
  • Spread the dark chocolate, then fresh berries and a bit of agave syrup on top.
