Vegan chocolate CREPES with dark chocolate spread and berries

Vegan chocolate crepes with dark chocolate spread and berries remind me of those trips in France. This eggless version of crepes tastes so good yet so simple to make. A perfect breakfast to start your Sunday.

  • 180 gr spelt flour
  • 30 gr cocoa powder
  • 1 tablespoon of cornstarch
  • 1 teaspoon of granulated sugar
  • 2 tablespoons of neutral-flavored oil (olive, canola, coconut, etc)
  • 250 ml unsweetened soy milk
  • 250 ml sparkling water
  • a sprinkle of salt
  • coconut oil / vegan butter to cook
  • 40 gr fresh strawberries
  • 30 gr blueberries
  • vegan dark chocolate spread
  • agave / maple syrup for serving
  • In a large bowl, whisk together the flour, cocoa powder, cornstarch, sugar, and salt.
  • Add the oil, soy milk, and sparkling water. Whisk well until smooth and well combined. Let it rest for 10 minutes.
  • Heat at a medium heat a nonstick pan, then add the vegan butter or coconut oil. Once melted, scoop a batter and spread it evenly in the pan, wait for around 3 minutes then flip the crepes (wait until the top part is fairly dry). Cook the other side for another 3 minutes.
  • Remove from the pan and repeat with the rest of the batter.
  • Serve them with dark chocolate spread and fresh berries, top it with agave or maple syrup. Enjoy!
