Crispy Baked Baby POTATOES

Crispy baked baby potatoes are so crunchy outside and tasty inside. A perfect side dish for sauteed vegetables or any meat substitution kinda dish. One main dish that you can pair with is this vegan Indonesian goulash. This is a simple and easy plant-based side dish to make.

  • 1 kg baby potatoes (or normal potatoes but baby potatoes work better)
  • 1 tbsp coarse salt
  • 2 l water
  • 1 tsp paprika powder
  • 3 cloves garlic (minced)
  • 20 gr fresh rosemary (minced)
  • Extra virgin olive oil
  • Salt and pepper
  1. Preheat the oven at 200°C.
  2. Wash the potatoes and boil them in a pot without peeling the skin. Add the coarse salt into it and cook them for around 25 – 30 minutes or until they are soft and “crushable”.
  3. Meanwhile, the potatoes are boiling, prepare the spice sauce by mixing all the last 5 ingredients in a bowl.
  4. Once the potatoes are soft, drain them and pat them dry, leave them to cool down a bit.
  5. Put the cooked potatoes on a baking tray with parchment paper and start to crush them one by one using the glass water.
  6. Start to brush them with the sauce until they are all covered evenly. Bake them at 200°C for 30 minutes or until the outside part becomes crunchy.
  7. Serve them hot with your favorite main dish!
