Baked POTATO with Polenta

Baked potato with polenta is the family’s favorite recipe. It’s so easy to make and the touch of polenta gives that crispy texture where everybody will definitely love it!

  • For any occasion

  • 1kg potatoes (wash without peeling the skin, cut in big chunks)
  • 20 gr yellow polenta flour
  • ½  teaspoon garlic powder
  • 1 teaspoon paprika powder
  • 10 gr fresh rosemary (chopped)
  • Salt and pepper
  • 3 tablespoon Extra virgin olive oil
  • Preheat the oven at 200°C
  • Bring to boil the potatoes and add coarse salt to taste (around 20 minutes).
  • Mix the polenta flour, garlic powder, paprika powder, rosemary, salt, pepper, and olive oil in a small bowl.
  • Pat dries the potatoes, puts them on parchment paper then mixes well with the mixed spices polenta.
  • Bake them in the oven for 40 minutes or until they are crispy golden brown.
  • Serve hot with your favorite dish or accompanied by the vegan mayonaise.
