Vegan CAULIFLOWER Fried Rice

Vegan cauliflower fried “rice” is a low-carb, tasty, and delicious dish that will free you from that guilty feeling because it’s all made of vegetables. It’s quick and easy to prepare, the perfect plate for lunch. The key for this yummy plant-based recipe is in the spices and herbs.

  • 1 Cauliflower (shredded or use a food processor to make them become flakes)
  • 2 carrots (cut in small diced)
  • ¼ purple cabbage (julienne cut)
  • 300 gr cavolo nero (get rid of the stem then cut
  • 150 gr frozen green peas (boiled until soft)
  • 4 shallots (thinly sliced)
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1 tsp coriander powder
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • 1 tsp dried sage
  • 1 tsp dried basil
  • Salt and pepper
  • Extra virgin olive oil
  • Heat the oil in a wok, then put all the spices and herbs until they are all fragrant. Add the shallots, cook for a few minutes.
  • Put in the carrots, cabbage, and cavolo nero. Mix them well until all the herbs and spices are spread evenly with the vegetables, cook for a few minutes until they become softer.
  • Add in the shredded cauliflower and mix well with all the ingredients then add salt and pepper, cook for another 10 minutes until all the vegetables blend well with the spices.
  • Turn off the heat, serve hot, sprinkle ground flaxseed and gomasio. Best serve with tempeh goreng as a side dish!
