Stir Fried TEMPEH broccoli

Stir-fried tempeh broccoli is my favorite dish. And this one is so quick and easy to make, perfect for lunch or dinner if you only have a short time to prepare. Best served with warm black or red rice!

  • 250 gr natural tempeh (diced cut and fry, refer to this recipe of fried tempeh)
  • 400 gr broccoli (cut in small florets)
  • 3 pcs shallots (thinly sliced)
  • 2 cloves garlic (thinly sliced)
  • 1 cm fresh galangal (optional), thinly sliced
  • 3 bay leaves
  • 2 tbsp dark sweet soy sauce
  • Salt and pepper
  • Extra virgin olive oil
  • 25 ml water
  • gomasio with spirulina algae as a topping.
  • Heat the oil in a pan, put in the shallots, garlic, galangal, and bay leaves. Sauté them until fragrant.
  • Add in the broccoli, combine, and stir well. Cover the pan for 5 minutes with medium-low heat and stir occasionally to soften the broccoli.
  • Put in the diced fried tempeh, stir, and mix well, then add the soy sauce and water.
  • Cook for a few minutes, add salt and pepper to taste.
  • Turn off the heat and serve with brown rice or hulled oats.
