Rebel Vegan Spanish PAELLA

Rebel vegan Spanish paella always recalls my summer and traveling time, so when I became vegan, I decided to create my own version of plant-based paella. The saffron fragrant and the beautiful color of paella are so inviting, it’s just so irresistible!

  • 300 gr rounded brown rice
  • 3 sachets of saffron
  • 250 gr natural firm tofu (cut in big diced)
  • 5 cloves garlic (minced)
  • ½ red bell pepper (cut in thick long slices)
  • ½ yellow bell pepper (cut in thick long slices)
  • 150 gr green peas
  • 1 tsp cayenne pepper powder
  • 1 tsp sweet paprika powder
  • 100 ml tomato sauce
  • 600 ml water (to boil the rice)
  • 600 ml vegetable broth (for the paella)
  • Preheat the oven at 180°C, wash the rice and cook them with +/- 600 ml, bring them to a boil until all the water is gone with the pan covered for 20 – 25 minutes (stir occasionally to avoid sticking).
  • Meanwhile, fry the tofu until golden brown and crispy. Also, bring to boil the vegetable broth while waiting for the rice to be ready.
  • Once the rice is almost ready, start with the paella. Heat the oil in a flat pan, if you don’t have the real paella pan (make sure they can go inside the oven). Add the garlic and cayenne pepper and sweet paprika powder, sauté until they are fragrant.
  • Add in the tofu, mix well, toss in the bell peppers, and stir to combine with the rest of the ingredients.
  • Bring in the tomato sauce and the saffron, stir well. Put in the cooked rice and make sure to mix it well with all the spices and vegetables.
  • Add the vegetable broth, start with half, and add them little by little to make sure you don’t overcook the rice.
  • Adjust with salt and pepper while adding the green peas, you shouldn’t stir once you already add in the green peas. Check occasionally if the rice is well cooked, if it’s still too hard then add more vegetable broth and continue cooking until the broth is dry and rice is soft.
  • Once it’s done, put the pan inside the oven and bake for 10 minutes to get that crispy texture. And your paella is ready to be served!
