Rebel Vegan Fried NOODLES

Rebel vegan fried noodles, I can really eat them every day. This easy and simple recipe is a comforting dish for me. And basically, you can use any kind of vegetables to make it. So, let’s get to the kitchen and create this addictive dish!

  • 300 gr dry noodles
  • 125 gr natural firm tofu (fried or air fried)
  • 1 red bell pepper
  • 200 gr broccoli (cut in small florets)
  • 1 carrot (cut into small thin sticks)
  • 3 medium shallots (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 cm ginger (minced)
  • 3 lime leaves
  • 1 ½ tbsp curry
  • 1 tsp turmeric
  • 1 tsp garam masala
  • Extra virgin olive oil
  • Salt and pepper
  • 1000 ml water to boil the noodles
  • Parsley (to garnish)
  • Bring to boil the water to cook the noodles.
  • Heat the oil in a wok then add in the shallots, garlic, ginger, and lime leaves; stir them well until they are fragrant.
  • Add the vegetables, mix well with the rest of the ingredients, cover the pan, and stir it occasionally until the vegetables are softer.
  • Meanwhile boil the noodles according to the direction of the package (until al dente), usually around 3 – 4 minutes. Turn off the heat and take the noodles out.
  • Add the spices into the vegetables once they are softer, stir and mix well then add in the cooked noodles. Put in the salt and pepper as needed to adjust.
  • Cook for a few minutes to make sure all the ingredients are well mixed.
  • Turn off the heat and serve hot.
