Rebel Vegan FAJITAS

Rebel vegan fajitas are one of the favorite plant-based recipes of my husband. The colorful bell pepper and the fresh taste of lime mixed with paprika are so indulging. The vegan version of this Mexican dish is definitely our comfort food at home. Best served with this red lentils tortilla.

  • 3pcs mixed medium red, green, and yellow bell peppers (long sliced)
  • 250 gr natural firm tofu (cut in chunky dice, then fry until golden brown)
  • 1 pcs big golden onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp coriander powder
  • 1 tsp paprika powder
  • 1 tsp garam masala (or cumin)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp lime juice
  • Preheat the oven at 180°C.
  • Heat the oil in a pan or skillet that can go in the oven, add in the onion and garlic, stir them until soft and fragrant then add the bell peppers and fried tofu, mix them well, and add all the spices. Cook them until the bell peppers are soft (+/- 15 minutes).
  • As a final touch before baking them in the oven, add in the lime, salt, and pepper to taste. Cook for another 3 minutes, then bake them in the oven for 10 minutes.
  • Serve them hot with homemade tortillas.
