Vegan Rebel Fried RICE

Vegan rebel fried rice is an all-time Indonesian favorite and probably the most popular Indonesian dish. A simple yet satisfying recipe for everyone. The good thing about this recipe is that you can put any kind of vegetable inside and customize it the way you want. Best served with vegan scrambled egg or crispy fried tempeh.

  • 250 gr rice (I usually use wild basmati rice or the brown rice as they are healthier)
  • -/+ 400 ml water
  • 1 medium carrot (cut in small diced)
  • ½ yellow bell pepper (cut in small diced)
  • 100 gr broccoli (cut in small florets)
  • 1 medium golden onion or 5 medium shallots (thinly sliced)
  • 2 garlic cloves (minced)
  • 2 cm ginger (peeled and minced)
  • 1 fresh lemongrass (1/2 teaspoon lemongrass powder)
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • Extra virgin olive oil
  • Salt and pepper
  • Wash the rice, put them in the rice cooker, add the water, and cook. Or if you boil it, you might need to add more water. You need to cover them once the water is all gone and leave the rice rest for at least 15’.
  • While the rice is almost ready, heat the wok or a cooking pan, add the onion or shallots, garlic, and ginger, and lemongrass, sauté for a few minutes until they are fragrant.
  • Add the carrot, broccoli, and bell pepper, stir occasionally in medium-low heat until they are softer.
  • Add the curry and turmeric powder, stir to mix well.
  • And finally, add in the cooked rice. Stir, and mix well with the sauce and vegetables then add salt and pepper as needed. After sautéing them for a few minutes they are ready to be served hot and add vegan scrambled egg to make the prettier color.
