Quinoa with Curried CHICKPEAS

Curried chickpeas with quinoa is a simple dish that is so full of nutrition yet so tasty. A perfect vegan dish if you don’t have much time to prepare.

  • 250 gr cooked chickpeas
  • 3 pcs shallots (thinly sliced)
  • 1 cm of fresh ginger (minced)
  • 50 ml coconut milk
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric powder
  • 250 gr quinoa
  • 450 ml water (to cook the quinoa)
  • Extra virgin olive oil
  • Salt and pepper
  • Wash the quinoa and bring them to boil in a covered pan until all the water is gone, leave it rest and covered for 10 minutes. Or you can use the rice cooker which is way simpler and quicker.
  • Wash and drain the chickpeas if you use canned chickpeas.
  • Heat the oil in a pan then add the shallots and ginger, cook them for a few minutes until fragrant.
  • Add the chickpeas, mix well with the shallots and ginger to taste, then add the curry and turmeric powder, stir well.
  • Pour the coconut milk, mix well with the rest of the ingredients then add salt and pepper.
  • Put the cooked quinoa in a bowl, add the chickpeas. You can serve it either as a hot or cold dish.
